Quick idea for carrot salad

I had a strip of leftover membrillo quince paste and added it to grated carrot, with a clove of garlic grated on the mircroplane, a dollop of mayo. A delicious sweetness. Try adding some at the end of a stir fry. A spoonful is enough.
