This article appeared in the Irish Examiner on 31 January, well ahead of time, but another will appear on Thursday 13th in which I give ideas for cooking a deliciously easy meal for two. I made the most meltingly lovely biscuits which I can claim as my own recipe (not as easy as it sounds), and a stir fried spicy duck dish with noodles worked out well and took less than half an hour. I cut a notch in a duck breast easily to achieve a heart shape, thanks to instruction from Master Butcher Simon O’Flynn in Cork. It’s all tasty fun, with no waste.
