Turkey leftovers and other ideas

  1. If tired of turkey heat pesto sauce thinned with a little pasta cooking water. Top thickly with grated Parmesan. Serve with salad of grated carrot + spinach
  2. Chop the last of turkey with ham and mix with crème fraiche or cream cheese thinned with stock for easy filling for savoury pancakes
  3. Add noodles to turkey carcass stock with grated fresh ginger, garlic, sliced bok choy, celery, grated carrot 4 for warming soup
  4. Sprinkle quartered unpeeled potatoes with smoked paprika. Rub with olive oil. Oven gas 4 30-40 mins for easy oven chips with omelette for easy supper
